Freeway’s FR-NJ600 croissant molding line is dedicated to the formation of all types of croissants and coiled baking products. Equipped with servo motors, safety features, micro-embedeed computer, and LCD touch panel, this line increases your bakery’s production and efficiency. Safe to operate and easy to clean.
The whole line consists of 6 modules: Calibrating head, Dough sheet splitter, Punching tools, Tray arrangement & separation unit, Croissant rolling unit, and Line control unit.
I. Calibrating head
When feeding the line with a dough spool, the calibrating head makes the thickcness and weight of the dough sheet (especially during transition) be uniformly distributed. The dough loop control ensures that the dough sheet passes through the multi-rollers without tension or stretching (in the infeed with electromagnetic dough scale and at the outfeed with light sensor).

II. Dough sheet splitter
Once the dough sheet has been calibrated and pass on to the dough sheet splitter, the dough is cut in stripes through a set of cutting discs.
III. Punching tools
The punching tools can give either a straight or an angle cut with highly-precise control process. We can make punching tools according to your specific requirements, so that you can get almost any shape of dough pieces you want. The tools are easy and convenient to be removed and replaced with a few steps.
IV. Tray arrangement & separation unit
This unit separates triangle doughs from each other on the dough sheet, then it will arrange triangle doughs on different trays on the moving belt.
V. Croissant rolling unit
Adjustable rolling rack, servo motor driven feeding, and programmable belt speed guarantee that the equipment will not damage the oil layer.
VI. Line control unit
The Line control unit is comprised of a micro-industrial computer inside and a LCD touch panel on the cabinet surface. User-friendly and concise GUI (Graphic User Interface) plays a significant role in monitoring, setting and interaction with the line. That’s why we have developed the specific embedded Operating Sysem which can receive production parameters (vitesse, cutting length, filling type and filling offset, operating mode, etc.) entered by users from the LCD touch panel. The whole production process is under the touch of your fingers. All belt drives can be continuously adjusted via the LCD touch panel. Therefore, their speed can be controlled evenly and uniformly with a central pilot control throughout the entire process.
